Recipe ingredients
- 1/3 cup (80 mL) store-bought barbecue sauce
- 1/4 cup (60 mL) pineapple juice
- 2 Tbsp. (30 mL) lime juice
- 1 tsp. (5 mL) lime zest
- 1 Tbsp. (15 mL) brown sugar
- 1 clove of garlic, chopped
- 1 Tbsp. (15 mL) citronella, coarsely chopped (optional)
- 1 tsp. (5 mL) crushed pepper
- Espelette or cayenne pepper, ground to taste
- 4 Quebec Pork chops, boneless, 2 cm (3/4”) thick
- Salt to taste
Preparation
Mix all marinade ingredients in a sealable container. Add chops to the marinade and cover. Refrigerate and marinate for at least 2 hours.
Preheat barbecue to medium-high.
Remove chops from marinade and cook for 4 minutes on each side so that they remain slightly pink in the centre. Add salt to taste while cooking.
