Recipe ingredients
- 4 tournedos of poultry (turkey, chicken or guinea-fowl)
- Safe oil
- Marinade
- 125 ml (1/2 cup) raspberry juice
- 125 ml (1/2 cup) safe port or red wine
- Salt and Pepper
- Raspberry Sauce
- 125 ml (1/2 cup) safe port or red wine
- 75 ml (1/3 cup) brown sugar
- 7 ml (1 ½ tsp) safe Dijon mustard
- 250 ml (1 cup) fresh or unfrozen raspberries
Preparation
Prepare the marinade.
Pour the marinade over the tournedos and marinate for 4 to 6 hours.
In a saucepan, combine the port wine, the brown sugar, the mustard and the raspberries.
Cook for 10 minutes on medium heat
Purée with a mixer and set aside the raspberry sauce.
Cook the tournedos on the BBQ or sauté in a pan.
Serve the tournedos, dressed with the raspberry sauce, on a bed of mixed lettuces or with your choice of vegetables.
