Recipe ingredients

  • 2 cups (400 g) onions, minced
  • 2 Tbsp. (30 mL) Académie Culinaire cooking butter
  • 2 Tbsp. (30 mL) flour
  • 2/5 cup (100 mL) Cognac
  • 1 cup (250 mL) Académie Culinaire, demi-glace
  • 2 cups (500 mL) water 
  • Salt and pepper to taste
  • Garnish
  • 50 g (1 ¾ oz) cheddar, grated
  • 50 g (1 ¾ oz) gruyere, grated
  • 12 bread, toasted slices

Preparation

Preheat oven at 400°F (200°C). 
In a pan, sear onions in hot cooking butter until obtaining a golden color. 
Sprinkle with flour to thicken. 
Deglaze with cognac, and flambéed 
Add demi-glace and water. Season with salt and pepper and simmer uncovered for 20-25 minutes. Keep warm. 
In small dishes, poor soup (about 60ml (1/4 cup) and place on top a slice of bread. Sprinkle with the cheese mixture and grate until obtaining a golden color.
