Recipe ingredients
- 1 1/2 cups (375 mL) whole-wheat flour
- 1/2 tsp. (3 mL) baking soda*
- 1/2 tsp. (3 mL) salt
- 1 cup (250 mL) coconut grated
- 1/2 cup (125 mL) butter* at room temperature
- 1/4 cup (60 mL) brown sugar*
- 1 egg*
- 1/2 tsp. (3 mL) Irresistible almond extract*
- 1/4 cup (60 mL) milk
- 2 Tbsp. (30 mL) whole-wheat flour
- As required raspberry jam
Preparation
Heat the oven to 375°F / 190°C.
Butter a cookie sheet.
Mix the flour, baking soda, salt and coconut.
Beat the butter, brown sugar and egg.
Pour the almond extract into the milk.
Add the flour mixture to the butter mixture, alternating with the milk.
Form the dough into small balls.
Dip a finger into flour and then, into the middle of each ball to make a small hollow and drop a little raspberry jam into it.
Place on the cookie sheet and cook for 12 minutes.
