Recipe ingredients
- 1/2 cup (125 mL) mayonnaise*
- 1 Tbsp. (15 mL) Irresistible Dijon mustard*
- 4 cups (1 L) cooked rice
- 1 lb. (450 g) tofu, cubed
- 1/2 cup (125 mL) finely diced celery
- 1/2 cup (125 mL) sliced carrot rounds
- 3 shallots, chopped
- 8 mushrooms sliced
- 4 Tbsp. (60 mL) fresh chopped parsley
- To taste salt and pepper
Preparation
In a bowl, mix mayonnaise, fine herbs and Dijon mustard.
In salad-dish, lightly mix in remaining ingredients and add the sauce to the salad.
Suggestion
For light salad dressing, you can use an equal volume of plain yoghurt instead of mayonnaise.
To reduce cholesterol, we balance the plate and add soy products to the menu.
