Recipe ingredients

  • 2 minced leeks
  • 2 lb. (1 kg) shoulder of lamb, bone-in
  • 2 cloves garlic
  • Prepared mild mustard to taste *
  • Salt and pepper to taste
  • 4 large potatoes, cut in 4
  • 1 tsp. (5 mL) dried marjoram
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 cups (500 mL) chicken broth
  • Juice of 2 fresh lemons

Preparation

Preheat oven to 400ºF/205ºC.
Cover the bottom of a roasting pan with minced leeks.
Insert slivers of garlic in the lamb shoulder.
Season and brush with mustard.
Put lamb on the leeks and arrange potatoes around the meat. Sprinkle with herbs.
Add broth to mid-way. Sprinkle with lemon juice.
Cover and cook 1 hour at 400ºF/205ºC.
Uncover and finish cooking at 350ºF/180ºC another 15 to 20 minutes.

Suggestion

Per person, count 200 g meat with bone or 150 g without.
