Mother's Day: The perfect recipe

The secret? Long-time traditions combined with a novel touch! Celebrating Mother’s Day along with the opening of the lobster season has almost become a tradition. Still others might say it also coincides with the opening of the barbecue season! But why not mark them all for a memorable Mother’s Day? There’s no denying the unwritten rule that guys protect their turf when it comes to cooking over the open flame of a barbecue... No better time for mother to relax without sticking her nose in the oven! Here then, is a menu fit for all moms.

Daddies, sons or chums, now’s the time to light the barbecue and braise your way to the title of head chef for a day.

Grilled lobster :

Barbecue-Steamed LobsterFill a pot large enough to hold your lobsters with water and add a healthy pinch of sea salt. Drop your live lobsters into the boiling water for 2 to 3 minutes. (Don’t worry: a recent study led by the Norwegian School of Veterinary Science of Oslo proved the brain and nervous system of lobsters are too rudimentary to transmit signals associated with pain.)

Once cooked, cut the lobsters lengthwise and brush the lobster meat with melted lemon-flavoured butter. When ready, put them flesh side down on the barbecue grill, close the lid, and they will be done to perfection in about 20 minutes. (Please note: You might just buy lobsters already cooked and flavour them in the same manner before reheating them on the grill for 5 or 10 minutes...)

Warm goat salad :

Lobster CanapésWhile the lobsters are grilling, place a few greens and edible flowers in small plates and sprinkle with a light dressing. It’s Mother’s Day after all! Brush olive oil on slices of baguette and top with about a centimetre of mature goat cheese. Cover the grill with aluminum paper, then place croutons and cheese on it. As soon as the cheese begins to melt, remove it from the heat and place 2 pieces on each plate. Mama Mia!



Gourmet asparagus with honey :

Grilled Asparagus with Aged Cheddar and Marinated Mushroom SaladChoose beautiful asparagus and roll them in a slice of prosciutto. Mix the sesame seeds with honey and a little soya sauce to obtain a smooth paste and coat the asparagus. Thread 5 stalks of aparagus onto skewers at the base and just below the tip to form a little asparagus “raft.” Place on the grill, but not directly over the flame to avoid charring your asparagus raft. From 5 to 10 minutes should suffice depending on the size of the asparagus.

Rose water fruit kebab :

Grilled Fruit BrochettesMake the fruit kebabs with large pieces of pineapple, mango and strawberries, for example, separated by a few fresh mint leaves. Brush it all with a mixture of rose or orange water and brown sugar. When it’s time for dessert, place your kebabs far from the flame for a few minutes.

Hot fruit coulis :

Cranberry coulis for New-York style vanilla cheese cakeYou’d like a hot coulis with which to flavour your Mother’s Day cake, or simply, a delicious vanilla ice cream? Put your favourite fruit in a small wrapper made from aluminum paper. For an even finer dessert, you might wish to flavour your fruit with a little maple syrup, almond or orange liqueur... After about 15 minutes on the grill, stir it in the blender. Wow!



That’s it! Preparation time for these treats is minimal, so chefs for a day can keep an eye on the grill… unless they are planting a kiss on mother’s cheeks.
