    prepared pie shell

  • 8

    canned peach halves in light syrup

  • 3

    eggs

  • 1/4 cup
    (60 mL)

    sugar

  • 1 1/4 cup
    (315 mL)

    milk

  • 1 Tbsp.
    (15 mL)

    cornstarch

  • 1/2 tsp.
    (2 mL)

    vanilla extract

  • 1/2 cup
    (125 mL)

    slivered almonds

Preparation

Preheat oven to 350°F / 180°C.

Bake pie shell 15 minutes. Remove and set aside.

Arrange peach halves in shell.

In a bowl, beat eggs, sugar, milk and cornstarch together well.

Microwave at high 1 1/2 minutes. Remove and whisk well.

Microwave 1 more minute until smooth. Remove and whisk in vanilla extract.

Pour custard over peaches.

Garnish with almonds and bake on lower rack 30 minutes.
