Add all
  • 1/2 cup
    (125 mL)

    plain low-fat yogurt

  • 1/2 cup
    (125 mL)

    low-calorie mayonnaise

  • 1

    red delicious apple, cored and chopped

  • 1

    celery, chopped

  • 1/3 cup
    (80 mL)

    toasted chopped hazelnuts

  • 3 Tbsp.
    (45 mL)

    scallion or sweet onion, finely chopped

  • 4 cups
    (1 L)

    (approx. 2 lbs or 900 g) cooked chicken, cut into strips

  • Salt and pepper to taste

  • boston lettuce leaves


In large bowl, combine yogurt and mayonnaise. Add apple, celery, 1/4 cup (60 mL) hazelnuts, onion, chicken, salt, and pepper. Mix, place on a bed of lettuce, and garnish with remaining hazelnuts. Serve immediately.
