Apple-endive Salad

Add all
  • Dressing:

  • 1 tsp.
    (5 mL)

    Dijon mustard

  • 2 tsp.
    (10 mL)

    cider vinegar

  • 1

    garlic clove crushed

  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • To taste Salt and pepper

  • 1

    large cortland apple

  • 1/2

    lemon in juice

  • 3

    endives washed and cut into pieces

  • 2

    scallions, chopped

  • 3/4 cup
    (190 mL)

    diced Oka cheese

  • 1/2 cup
    (125 mL)

    toasted walnuts


In a small bowl, mix dressing ingredients together. Set aside.

Wash, core and dice apple. Sprinkle with lemon juice.

In a large bowl, mix apples with remaining salad ingredients.

Before serving, drizzle with dressing and toss to coat everything.
