Apple-Grape Salad with Mixed Greens

Ingredients

Add all
  • Dressing:

  • 1/3 cup
    (80 mL)

    olive oil

  • 2/3 cup
    (170 mL)

    plain yogurt

  • 4 tsp.
    (20 mL)

    wine vinegar

  • 4 tsp.
    (20 mL)

    fresh-squeezed lemon juice

  • 1 1/2 tsp.
    (8 mL)

    Dijon mustard

  • salt and pepper to taste

  • fresh mint or dried to taste

    small red apples sliced

  • 2

    stalks celery, chopped

  • 1 1/4 cups
    (315 mL)

    red and green seedless grapes cut in two

  • 2/3 cup
    (170 mL)

    walnuts coarsely chopped

  • 1/3 cup
    (80 mL)

    raisins

  • 3 cups
    (750 mL)

    alfalfa sprouts

  • 3 cups
    (750 mL)

    leaf lettuce

Preparation

In a bowl, mix dressing ingredients together.

Add apples, celery, grapes, walnuts and raisins. Set aside.

Divide leaf lettuce and alfalfa sprouts among four plates. Top with apple-grape salad.
