Ingredients

Add all
  • 1/3 cup
    (80 mL)

    onions, thinly sliced

  • 2

    garlic cloves, thinly sliced

  • 2 Tbsp.
    (30 mL)

    olive oil

  • 1/4 cup
    (60 mL)

    tomato paste

  • 1 cup
    (250 mL)

    dry white wine

  • 1 Tbsp.
    (30 mL)

    herbs of provence

  • 1 Tbsp.
    (15 mL)

    paprika

  • 1 tsp.
    (5 mL)

    cayenne pepper

  • Salt and pepper to taste

  • 6 lb
    (3 kg)

    mussels

Preparation

In a large pot, sauté the onion and garlic in oil for 1 minute

Incorporate the tomato paste and continue cooking approximately 2 minutes

Add the white wine, herbs of Provence and season.

Once the liquid is simmering gently, add the museels, cover and raise the heat.

Cook from 5 to 7 minutes. Stir frequently during cooking.
