Ingredients

    won ton wrappers

  • sufficient quantity, oil, for frying

  • 10 oz
    (284 g)

    baby spinach

  • 1 cup
    (250 mL)

    water chestnuts, cut into thin julienne strips

  • 2

    fresh ripe plums, pitted and thinly sliced

  • 2

    green onions, sliced

  • 1/4 cup
    (60 mL)

    cilantro leaves, torn

  • 1/4 cup
    (60 mL)

    teriyaki sauce

  • 2 Tbsp.
    (30 mL)

    rice vinegar

  • 1 Tbsp.
    (15 mL)

    extra virgin oil

  • 1 Tbsp.
    (15 mL)

    sesame oil

  • 1 tsp.
    (5 mL)

    fresh ginger, grated

  • 1/2 tsp.
    (2 mL)

    sugar

Preparation

To make Crispy Won Ton Strips: cut 6 won ton wrappers into 1/4-inch (0.5 cm) strips. Fry in 1 inch (2.5 cm) of hot vegetable oil for 2 minutes or until golden brown then remove with a slotted spoon and drain well on paper towels.

Combine all salad ingredients except won ton strips in a medium salad bowl.

Whisk together all dressing ingredients and pour over salad.

Toss well to coat and top with won ton strips.
