  • 2

    lightly toasted 14 grain bread

  • 1 tsp.
    (5 mL)

    softened, preferably unsalted butter

  • adequate quantity alfalfa, radish or sunflower sprouts

  • 12

    fresh, frozen or canned cooked asparagus tips

  • 4

    cooked ham or smoked turkey

  • 1

    diced tomato

  • 1 Tbsp.
    (15 mL)

    light mayonnaise or plain yogurt

  • paprika to taste

  • 1 tsp.
    (5 mL)

    fresh chopped parsley

Preparation

Butter the bread slices.

Line the edges of the bread slices with alfalfa or other sprouts.

Cut the ham slices in squares. Place 3 asparagus tips diagonnaly across each square and roll up the meat.

Use a decorative toothpick to hod the ham roll together.

Place two ham rolls diagonnaly on each piece of toast. Garnish with a little mayonnaise or yogurt.

Place on a serving dish. Sprinkle with paprika and parsley.

Serve immediately. Delicious with a glass of vegetable juice.
