  • 1/2 cup
    (125 mL)

    brown sugar

    eggs

  • 1 1/2 cups
    (375 mL)

    mashed ripe bananas

  • 2 tsp.
    (10 mL)

    orange zest

  • fruit sauce

  • 1 cup
    (250 mL)

    all-purpose flour

  • 1 cup
    (250 mL)

    whole-wheat flour

  • 1 1/2 tsp.
    (8 mL)

    baking powder

  • 1 tsp.
    (5 mL)

    baking soda

  • 1 pinch

    salt

  • 1/2 tsp.
    (2 mL)

    cinnamon

  • 1/2 tsp.
    (2 mL)

    nutmeg

  • 1/3 cup
    (80 mL)

    walnut pieces

  • 1/3 cup
    (80 mL)

    raisins

  • 1/2 cup
    (125 mL)

    milk

Preparation

Preheat oven to 350°F / 175°C.

In a bowl, cream butter and sugar.

Add eggs one at a time, mixing after each addition.

Add bananas, orange zest and fruit sauce, mixing well.

In a bowl, combine flours, baking powder, baking soda, salt, spices, walnuts and raisins.

Add dry ingredients to banana mix, alternating with milk.

Transfer batter to a lightly greased loaf pan measuring 5 x 9 in. (23 x 13 cm).

Bake 60 min or until a toothpick inserted in the centre comes out clean.
