  • 8

    chicken drumsticks

  • 1/2 cup
    (125 mL)

    extra virgin olive oil

  • Salt and pepper to taste

  • 2

    green bell peppers, thinly sliced

  • 3 1/2 oz
    (100 g)

    prosciutto, cut into small dice

  • 1

    large onion, thinly sliced

  • 4

    medium tomatoes, blanched and deseeded

  • 5

    garlic cloves, chopped


In a large pan over medium-high heat, brown the chicken drumsticks in the olive oil. Cook over medium heat for about 15 minutes. Season.

Add the peppers and prosciutto and continue cooking for about 20 minutes.

Add the onion and cook for 15 minutes.

Add the tomatoes and garlic, cover and continue cooking for about 15 minutes.

To serve, arrange the chicken pieces on a warm plate and cover with the tomato, pepper and prosciutto mixture.
