BBQ sausages and Corn, roasted Pepper Mayonnaise

    corn, leaves removed

  • 1/2 cup
    (125 mL)

    light mayonnaise

  • 1/4 cup
    (60 mL)

    roasted red peppers in a jar, drained, diced

  • 2 Tbsp.
    (30 mL)

    fresh chives

  • to taste freshly ground black pepper

  • 1 Tbsp.
    (15 mL)

In a bowl, whisk together the mayonnaise, peppers, chives and black pepper. Reserve half of the mayonnaise..

Preheat barbecue to medium high. Oil the grate.

Brush corn with butter and bake about 8 minutes, turning occasionally.

Remove from heat and brush the corns of the rest of mayonnaise and put on the barbecue. Continue cooking about 8 minutes, turning occasionally. The grains should be brown and still slightly firm to the bite.

Serve with mayonnaise that has been reserved.

Preheat barbecue to medium-high. Grill sausages 5 - 6 minutes. Slice cooked sausages diagonally.
