Beef and Eggplant Brochettes

Ingredients

Add all
  • 1 lb
    (450 g)

    beef sirloin cut into 20 cubes

  • 1

    onion cut in 10 pieces

  • 1

    green pepper cut in 10 pieces

  • 10

    cherry tomatoes

  • 1

    eggplant, thickly sliced

  • marinade:

  • 1/4 cup
    (60 mL)

    plain yogurt

  • 2 Tbsp.
    (30 mL)

    lemon juice

  • 2

    garlic cloves

  • 2 Tbsp.
    (30 mL)

    fresh ginger, chopped

  • 2 tsp.
    (10 mL)

    paprika

  • 1/2 tsp.
    (3 mL)

    cayenne pepper

  • 1/2 tsp.
    (3 mL)

    nutmeg

  • 1/2 tsp.
    (3 mL)

    cumin

  • 1/2 tsp.
    (3 mL)

    ground coriander

Preparation

Mix all the marinade ingredients in a food processor.

Marinate the beef cubes in a bowl in the refrigerator for 3 hours. Stir occasionally.

Assemble the beef cubes on skewers, alternating them with the vegetables.

Cook under the grill 8 to 10 minutes, to the desired degree of cooking.

Turn the brochettes often.
