Beef Enchiladas with Salsa

Add all
  • 1 1/4 lb
    (570 g)

    ground beef

  • 1 Tbsp.
    (15 mL)

    olive oil extra light

  • 1 cup
    (250 mL)

    mexican salsa, your choice

  • 1 Tbsp.
    (15 mL)

    chopped fresh coriander

  • 2 Tbsp.
    (30 mL)

    lime juice

  • 1 Tbsp.
    (15 mL)

    Tabasco sauce

  • Salt and pepper to taste

  • 10-12

    large tortillas


Preheat the oven to 325°F (165°C).

In a frying pan, brown beef; drain well.

Add the remaining ingredients, except wheat tortillas; mix and season.

Put some beef mixture on each tortilla and roll.

Place tortillas in an oiled casserole dish (open side down) and bake 20 to 25 minutes. Serve.
