Beef-veggie Tacos

Ingredients

Add all
  • 1 Tbsp.
    (15 mL)

    vegetable oil

  • 1/2

    onion, chopped

  • 1/4 cup
    (60 mL)

    cubed green pepper

  • 1/4 cup
    (60 mL)

    corn kernels

  • 1/4 cup
    (60 mL)

    diced tomatoes

  • 1 lb
    (450 g)

    ground beef

  • 1 pkg
    (35 g)

    taco seasoning

  • 1 cup
    (250 mL)

    water

  • 8

    taco shells

  • shredded lettuce to taste

  • 1 1/2 cups
    (375 mL)

    grated mozzarella

Preparation

In a skillet, brown onion in hot oil for 1 min. Add vegetables and cook 2 min. more. Remove and set aside.

In the same skillet, cook meat 5-7 min. or until thoroughly done. Add seasonings, water and vegetables and continue cooking over medium-high heat for 5 min.

Spoon mixture into taco shells and garnish with lettuce and cheese.

Suggestion : Ground beef can be replaced by ground pork
