    royal gala apple

  • 1 tsp.
    (5 mL)

    lemon juice

  • 1

    stalk celery

  • 2

    green onions

  • 1/4 cup
    (60 mL)

    gourmet blue cheese dressing

  • 1

    head of boston bibb, leaves separated

  • endive leaves to garnish

  • whole pecans as needed

  • dried cranberries as needed


Dice apple and sprinkle with lemon or apple juice.

Finely dice celery and green onions and add to apple.

Toss with blue cheese dressing and set aside.

Make a bed of lettuce leaves in the centre of the plate and set diced mixture in it.

Garnish with endive leaves and sprinkle with pecans and cranberries.
