    boneless chicken breasts

    sourdough bread

  • 4

    romaine lettuce

  • 1

    avocado, peeled and cut into 8 slices

  • 2

    large ripe tomatoes

  • salt and pepper

  • Non-stick cooking spray

  • citrus mayonnaise:

  • 1/3 cup
    (80 mL)

    mayonnaise

  • 2 Tbsp.
    (30 mL)

    orange juice concentrate

  • 1 tsp.
    (5 mL)

    lime juice

  • 1/2 tsp.
    (2 mL)

    cumin

Preparation

Mayonnaise

Combine all the ingredients in a bowl.

Chicken

In a non-stick skillet sprayed with cooking spray, cook the chicken breasts for 5 minutes on each side over medium heat. Reduce the heat, cover and cook 5 minutes longer. Check that the chicken is thoroughly cooked. Remove and slice lengthwise in half.

Sandwich

Spread each slice of bread with citrus mayonnaise. On one slice place 1 lettuce leaf, 1/2 chicken breast, 2 slices of tomato and 2 slices of avocado. Top with a second slice of bread.
