Candied Ginger Fruit Salad

    lemon juice

  • 1 Tbsp.

    candied ginger, finely chopped

  • 4 cups
    (1 L)

    fresh fruit mixture


In a small saucepan, combine the water, sugar, lemon juice and ginger. Bring to a boil. Reduce heat, cover and let simmer for 5 minutes. Pour the syrup in a small bowl and let cool for 10 minutes. (You can make the ginger syrup in advance and store, covered. It will keep in the refrigerator until the next day.)

In a large bowl, combine the fruit mixture (if using apples, chop and add them at the last minute). When ready to serve, pour the cooled ginger syrup over the fruit mixture and stir delicately to distribute. Divide the fruit salad into 6 dessert bowls.
