Cantaloupe-Bocconcini and smoked ham Salad

  • 1

    lemon, juice and zest

  • 2 Tbsp.
    (30 mL)

    olive oil

  • 2 Tbsp.
    (30 mL)


  • 2 tsp.
    (10 mL)

    balsamic vinegar

  • 2 1/2 cups
    (625 mL)


  • 200 g

    mini bocconcini

  • 2/3 cup
    (170 mL)

    smoked ham slices, cut in thin strips

  • 3 Tbsp.
    (45 mL)

    shredded fresh mint


In a bowl, mix lemon juice and zest with oil, honey and balsamic vinegar. Set aside.

In another bowl, gently mix remaining ingredients together.

Add dressing and toss lightly. Chill salad for at least 30 minutes before serving.
