Ingredients

Add all
  • 2 cups
    (500 mL)

    cappuccino and biscotti ice cream

  • 1 1/2 cup
    (375 mL)

    digestive biscuits, in crumbs

  • 1/4 cup
    (60 mL)

    sugar

  • 1/3 cup
    (80 mL)

    butter, melted

  • 2 cups
    (500 mL)

    brown sugar

  • 2/3 cup
    (170 mL)

    all-purpose flour

  • 3

    eggs

  • 1 tsp.
    (5 mL)

    coffee extract

Preparation

Combine all ingredients in a food processor. Process to make fine crumbs.

Arrange in a 16 1/2-inch X 10-inch (26 cm X 6 1/2 cm) Pyrex dish.

Set aside.

Process all ingredients in a food processor until smooth.

Pour into prepared crust and bake in 375°F (190°C) oven for 40 minutes.

Let cool.
