  • 1 1/2 lb
    (680 g)

    lean ground pork

  • 2 Tbsp.
    (30 mL)

    dry white wine

  • hot sauce (tabasco, harissa, red hot) to taste

  • 2 Tbsp.
    (30 mL)

    plain fine breadcrumbs

  • 1 Tbsp.
    (15 mL)

    grated ginger

  • 1 Tbsp.
    (15 mL)

    curry powder

  • 2 tsp.
    (10 mL)

    minced garlic

  • 1/2 tsp.
    (2 mL)

    all spice

  • 6

    hamburger buns

  • mango mayonnaise

  • 1/2 cup
    (125 mL)

    mayonnaise

  • 1/2 cup
    (125 mL)

    minced fresh mango

  • 2 Tbsp.
    (30 mL)

    lime juice

  • Salt and pepper to taste

Preparation

Combine pork with wine, hot sauce, breadcrumbs, ginger, garlic, curry powder and seasonings in a large bowl.

Make patties.

Preheat barbecue to medium.

Cook patties on an oiled grill, turning only once, for 15 to 20 minutes.

Do not press patties.

Ground pork must always be fully cooked and never served underdone.

Mix all mayonnaise ingredients together in a bowl and let rest 30 minutes in the refrigerator.

Build your burger by placing patty and mango mayonnaise between your favourite burger buns.
