Ingredients

    eggs

  • 3 Tbsp.
    (45 mL)

    nuvel non-hydrogenated margarine

  • 1/2 cup
    (125 mL)

    brown sugar

  • 2 cups
    (500 mL)

    grated carrots

  • 1/4 cup
    (60 mL)

    chopped walnuts

  • 1 tsp.
    (5 mL)

    ground cinnamon

  • 1 Tbsp.
    (5 ml)

    vanilla

  • salt

  • 1 cup
    (250 mL)

    milk

  • 1 cup
    (250 mL)

    all-purpose flour

  • 1 cup
    (250 mL)

    whole-wheat flour

  • 2 tsp.
    (10 mL)

    baking powder

Preparation

Preheat oven to 350 °F/180°C.

Mix first 9 ingredients, adding them to batter as listed.

In another bowl, mix flours and baking powder together.

Add dry ingredients to batter and mix just until combined.

Pour batter into a greased square pan.

Bake about 50 min. or until a toothpick inserted in the centre comes out clean.

Serve iced or plain.
