Cheddar and Corn Chowder

Ingredients

Add all
  • 4

    shallots, chopped

  • 1/4 cup
    (60 mL)

    corn oil

  • 1/2

    green pepper, diced

  • 1/2

    red pepper, diced

  • 1 cup
    (250 mL)

    vegetable or chicken broth

  • 2 cups
    (500 mL)

    corn kernelsor 3 cooked shelled corn

  • 2 cups
    (500 mL)

    milk

  • 1/2 cup
    (125 mL)

    grated yellow cheddar

  • 2 Tbsp.
    (30 mL)

    chopped fresh chives

  • Freshly ground black pepper to taste

Preparation

Heat oil in a big kettle and brown shallots.

Add red and green peppers and cook 1 minute.

Stir in broth, corn and milk.

Cook at just under a boil for 15 minutes.

Add cheddar, chives and freshly ground pepper.

Stir briefly.

Serve immediately.
