Cheesy Lime Cauliflower Purée

Add all
  • 2 cups
    (500 mL)


  • 4 cups
    (1 L)

    cauliflower florets, washed

  • 1

    pinch coarse salt

  • 1

    strip lime zest

  • 1 Tbsp.
    (15 mL)

    lime juice

  • 1/4 cup
    (60 mL)

    light cream cheese

  • salt and freshly ground pepper to taste


Bring water to a boil.

Add cauliflower and coarse salt.

Cook 4 minutes on medium. Drain.

In a food processor, purée cauliflower.

Add lime zest and juice and cream cheese. Season.

Purée again. Adjust seasoning.

This cauliflower purée is delicious with grilled fish.
