    scallions, thinly sliced

  • 1

    garlic clove, chopped

  • 2 Tbsp.
    (30 mL)

    chopped fresh parsley or basil

  • 3 Tbsp.
    (45 mL)

    extra virgin olive oil

  • 2 Tbsp.
    (30 mL)

    balsamic vinegar

  • 1 Tbsp.
    (15 mL)

    fresh lemon juice

  • Salt and freshly ground pepper to taste

  • 1 1/2 cups
    (375 mL)

    halved cherry tomatoes

  • 1 1/2 cups
    (375 mL)

    shredded salami

  • 1/3 cup
    (80 mL)

    grated fresh Parmesan


In a pot, cook penne according to package instructions. Drain and cool.

In a bowl, mix cooled pasta, scallions, garlic, parsley or basil, oil, vinegar, lemon juice, salt and pepper together.

Stir in tomatoes.

Sprinkle salami and parmesan over top.
