Chicken and Bleubry Filo Packets

    leek, white part only, in julienne strips

  • 10 oz
    (285 g)

    ground chicken

  • 1

    green onions, finely chopped

  • 1/4 cup
    (60 mL)

    fresh fennel bulb, chopped

  • 1

    garlic clove

  • 5 oz
    (150 g)

    canadian bleubry cheese, rind removed

  • 8

    chopped fresh mint leaves or 1 teaspoon (5 ml) dried mint

  • 1/4 tsp.
    (1 mL)


  • 1/2 cup
    (125 mL)

    melted butter

  • 9 sheets

    filo pastry


Preheat oven to 400 °F (200 °C).

Steam julienne of leek for 10 minutes. Drain well.

Place leek in food processor with chicken or turkey, shallot, fennel, garlic, Bleubry cheese and mint. Season with pepper. Process to combine.

Arrange 1 filo sheet on work surface. Brush with butter. Top with second sheet and brush with butter. Top with third sheet. Cut triple layer in half. Place 1/6 of chicken mixture in centre of each filosection. Roll up to enclose filling and brush with more butter.

Repeat with remaining phyllo sheets and chicken filling, to make a total of 6 packets.

Place packets on greased baking sheet. Bake 20 to 25 minutes, or until golden-brown. Serve with a green salad.
