Chicken Breast Marinated in Citrus Juice

Add all
  • 1/4 cup
    (60 mL)

    olive oil

  • 1/2 cup
    (125 mL)

    citrus juice

  • 1/4 cup
    (60 mL)

    fresh parsley, chopped

  • 4

    boneless chicken breasts

  • 2 Tbsp.
    (30 mL)

    vegetable oil

  • 4 slices


  • 1/2

    white onion sliced into rings

  • 8

    mushrooms, sliced

  • 2 Tbsp.
    (30 mL)

    chicken broth concentrate

  • 4


  • To taste Salt and pepper


Mix the olive oil, citrus juice and parsley in a glass bowl.

Add the chicken, cover and marinate in the refrigerator for 30 minutes.

Drain the chicken.

Preheat the barbecue to medium heat.

Brush a sheet of parchment paper with oil and place chicken on top.

Add the tomatoes, onion, mushrooms, chicken broth concentrate

and rosemary.

Seal the papillotes, place on a sheet of aluminum foil and cook

for 10 to 15 minutes.

Let stand for 2 minutes before serving.
