Chicken Brochettes with Raspberry-Garlic Butter

    chicken cubes

  • Sufficient mushrooms

  • Sufficient mango cubes

  • Sufficient apple slices

  • Sufficient raspberry vinegar

  • raspberry-garlic butter

  • 6

    garlic cloves roasted and chopped

  • 1/2 cup
    (125 mL)


  • 1/2 cup
    (125 mL)

    fresh raspberries crushed

  • 1 tsp.
    (5 mL)

    raspberry vinegar

  • To taste salt and ground pink pepper


Prepare brochettes, alternating pieces of chicken and fruit. Set aside.

Mix raspberry-garlic butter ingredients together in a bowl.

Spread mixture on a sheet of plastic wrap and shape into a roll.

Chill 1 hour in the freezer.

Preheat barbecue to medium heat.

Brush chicken brochettes with raspberry vinegar.

Barbecue 8 to 10 minutes, turning brochettes occasionally.

Top each brochette with a slice of raspberry-garlic butter.
