Chicken-Mango Quesadillas

Add all
  • 1 1/2 cups
    (375 mL)

    diced cooked chicken

  • 1

    mango, peeled and diced

  • 1/4 cup
    (60 mL)


  • 3 Tbsp.
    (45 mL)

    chopped fresh coriander

  • 1/2

    red onion, chopped

  • Salt and pepper to taste

  • 4

    large plain tortillas

  • vegetable oil to taste

  • 1 1/2 cups
    (375 mL)

    grated cheese


In a bowl, mix chicken, mango, salsa, coriander and onion together. Season.

Cover 2 tortillas with mixture.

In a skillet, heat a little oil and brown first tortilla 2-3 min. Add a third of the cheese and top with another tortilla. Turn.

Cook another 2-3 min.

Repeat for second quesadilla.

Cut each quesadilla into 8 pieces.
