Chicken Salad with Lemon Dressing

Add all
  • Dressing:

  • 1/3 cup
    (80 mL)

    olive oil

  • 3 Tbsp.
    (45 mL)

    fresh lemon juice

  • 1 Tbsp.
    (15 mL)


  • 2 tsp.
    (10 mL)

    lemon zest

  • 1

    garlic clove, chopped

  • Salt and pepper to taste

  • 2

    chicken breasts

  • 1/2

    red onion sliced very thin

  • 2 Tbsp.
    (30 mL)

    capers drained

  • 1 cup
    (250 mL)

    yellow and red cherry tomatoes halved

  • 1/2 cup
    (125 mL)

    whole black olives

  • 454 g

    garden salad


In a bowl, mix dressing ingredients together. Set aside.

In a skillet, brown chicken breasts in hot oil about 6-7 min. per side. Cut into strips and keep warm.

In the same skillet, brown onion 1 min. Add tomatoes, capers and olives and sauté just until tomatoes are slightly soft.

Divide garden salad among 4 plates. Place chicken strips on salad, cover with cooked tomatoes and drizzle with dressing.
