Cider Vinegar Court Bouillon

Ingredients

Add all
  • 2 cups
    (500 mL)

    dry white wine

  • 10 cups
    (2 1/2 L)

    salted, peppered water with a small amount of vinegar

  • 1/2 cup
    (125 mL)

    cider vinegar

  • 1

    sliced onion

  • 1

    sliced carrot

  • 3

    cloves

  • 1/4 tsp.
    (1 mL)

    chopped fresh thyme

  • salt and pepper

Preparation

Put all the ingredients in a pan and bring to a boil. Simmer for 20 minutes, skimming often. Strain and cool.

Cook fish.
