    codfish fillets

  • 4 tsp.
    (20 mL)


  • 1

    lemon sliced

  • 4 tsp.
    (20 mL)

    unsalted butter

  • 2

    carrots finely julienned

  • 1/4 cup
    (60 mL)

    lemon juice

  • 2

    cloves garlic minced

  • 2 tsp.
    (10 mL)


  • 2 tsp.
    (10 mL)


  • 1 pkg

    fresh spinach chopped


Preheat oven to 350 °F (180 °C).

Tear off 4 sheets of aluminum foil.

On each sheet of aluminum foil, place one codfish filet, sprinkle with oregano and top with a slice of lemon and 5 mL (1 tsp.) butter.

Arrange the julienned carrots around the fillets and sprinkle with lemon juice.

Fold the aluminum foil around the fillets to form a bundle.

Put the bundles on a baking sheet and bake 5 to 8 minutes.

Meanwhile, brown garlic in an oil and butter about 2 minutes.

Add spinach and cook 2 minutes, stirring often.

Serve codfish and carrots on a bed of spinach
