Cream of Celery Soup

  • 1 Tbsp.
    (15 mL)

    sesame oil

  • 0.500

    head celery, cleaned, finely chopped

  • 0.500

    onion, chopped

  • 2 Tbsp.
    (30 mL)

    sesame seeds

  • 2 Tbsp.
    (30 mL)


  • 1 1/4 cup
    (315 mL)


  • 1 3/4 cup
    (440 mL)

    vegetable broth

  • Salt and pepper to taste

  • celery leaf garnish


In a deep pot, heat butter and oil.

Add celery, onion and sesame seeds; cook over low heat 10 minutes.

Add flour; cook 2 minutes.

Remove from heat; gradually stir in the milk and broth.

Bring to a boil; simmer 30 minutes.

Season to taste, remove from heat and cool.

Liquefy in the blender or food processor.

Reheat over low heat and serve.
