Add all
  • caesar dressing

  • 1/2 cup
    (125 mL)

    grated Parmesan cheese

  • 1 Tbsp.
    (15 mL)

    Dijon mustard

  • 2 tsp.
    (10 mL)

    garlic, minced

  • 3

    anchovies, chopped finely

  • 2/3 cup
    (170 mL)

    mild olive oil

  • 1 Tbsp.
    (15 mL)

    freshly squeezed lemon juice

  • Salt and freshly ground pepper to taste

  • 1

    head romaine lettuce, washed and dried

  • Sufficient quantity, croutons

  • 6

    slices smoked bacon, cooked until crisp and crumbled

  • 1/2 cup
    (125 mL)

    grated Parmesan cheese

  • 4

    chicken brochettes, grilled

  • Parmesan cheese petals to taste


Place all the ingredients for the dressing, except for the olive oil, in a food processor. While the machine is running, add the oil in a thin stream through the feed tube. When the dressing is emulsified, taste, adjust the seasonings and set aside.

Tear the lettuce into pieces, place in a large salad bowl and toss with the dressing, croutons and bacon bits. Add the grated parmesan and toss again.

Serve with the chicken brochettes and parmesan petals.
