Creamy Caper and Lemon Sauce

Ingredients

Add all
  • 1/2 cup
    (125 mL)

    35% cream

  • 2 tsp.
    (10 mL)

    lemon juice

  • 2 tsp.
    (10 mL)

    lemon zest, grated

  • 2 tsp.
    (10 mL)

    capers, chopped

  • 2 tsp.
    (10 mL)

    fresh tarragon, chopped

  • 2 Tbsp.
    (30 mL)

    mayonnaise

  • Salt and pepper to taste

Preparation

In a bowl, vigorously whip the cream until it forms stiff peaks.

Using a spatula, delicately fold remaining ingredients into the whipped cream. Serve with fish or seafood.

Pairs perfectly with Salmon Wellington. May be prepared up to 12 hours in advance.
