Ingredients

Add all
  • Dressing:

  • 1 pkg

    soft tofu

  • 1/4 cup
    (60 mL)

    red wine vinegar

  • 1/3 cup
    (80 mL)

    olive oil

  • 1

    garlic clove, chopped

  • 1 tsp.
    (5 mL)

    oregano

  • 1 tsp.
    (5 mL)

    basil

  • 1/4 tsp.
    (1 mL)

    salt

  • 1/4 tsp.
    (1 mL)

    pepper

  • 1/4 tsp.
    (1 mL)

    sugar

  • Salad

  • 1

    English cucumber, cubed

  • 2

    medium tomatoes, cubed

  • 2

    medium green peppers, cubed

  • 1/2

    medium white or red onion, cubed

  • 1/2 cup
    (125 mL)

    chopped parsley

  • 2 cups
    (500 mL)

    cubed feta cheese

  • 1 cup
    (250 mL)

    black olives

Preparation

In food processor, mix dressing ingredients together until smooth and creamy. Set aside.

In a large salad bowl, mix remaining ingredients together.

Add dressing and toss just before serving.
