Currant-Coriander Rice

Ingredients

Add all
  • 1/3 cup
    (80 mL)

    currants

  • 1/3 cup
    (80 mL)

    white wine

  • 3/4 cup
    (190 mL)

    rice

  • 1/2 cups
    (125 mL)

    chicken broth

  • 1/2 tsp.
    (2 mL)

    coriander

  • 1 Tbsp.
    (15 mL)

    fresh coriander

Preparation

Soak the currants in the wine for at least 30 minutes.

In a pot, bring chicken broth to a boil. Add rice, currants (and wine!) and ground coriander. Cook over low heat until rice is done. Stir in minced fresh coriander and serve.
