Ingredients

Add all
  • filling:

  • 2 1/2 cups
    (625 mL)

    cooked turkey, diced

  • 1/3 cup
    (80 mL)

    light mayonnaise

  • 3 Tbsp.
    (45 mL)

    vanilla yogurt

  • 2 tsp.
    (10 mL)

    madras curry powder

  • 1

    green apple, unpeeled, cored and diced

  • 1/3 cup
    (80 mL)

    celery, diced

  • 2 Tbsp.
    (30 mL)

    golden raisins

  • 1/4 cup
    (60 mL)

    pecans, chopped (optional)

  • Salt and freshly ground pepper to taste

  • Sufficient quantity, romaine lettuce leaves

  • 180 g

    sliced yellow cheddar cheese

  • 4 to 6

    whole wheat pitas, halved

Preparation

In a large bowl, combine all the ingredients for the filling and adjust the seasoning. Refrigerate the mixture for at least 1 hour.

Place one lettuce leaf and a quarter of the cheddar cheese slices in each pita pocket. Place the filling between the cheese and the lettuce to keep the pita from getting soggy.

Wrap well and refrigerate.
