Add all
  • Rendered duck fat or peanut oil as required

  • 4

    medium Québec Yukon Gold potatoes

  • sea salt to taste


In a deep fryer, preheat duck fat to 275°F (140°C).

Peel potatoes and cut into fries.

Blanch fries about 4 minutes and drain on paper towels. Cool.

In the deep fryer, heat duck fat to 350°F (180°C).

Add fries and cook about 5 minutes or until golden brown.

Drain and salt. Serve immediately.

Accompany with preferred flavoured mayonnaise.
