Ingredients

Add all
  • Dressing:

  • 1/4 cup
    (60 mL)

    light mayonnaise

  • 1/4 cup
    (60 mL)

    plain low-fat yogurt

  • 1 Tbsp.
    (15 mL)

    sliced green olives

  • 1

    shallot, thinly sliced

  • 2 Tbsp.
    (30 mL)

    chopped parsley

  • pepper and salt to taste

  • 4

    hard-boiled eggs, cut into wedges

  • 1

    celery stalk, thinly sliced

  • 0.500

    green pepper, diced fine

  • 1

    head of lettuce, chopped

Preparation

Dressing

In a small bowl, mix first six ingredients to make the dressing.

Salad

In another bowl, combine remaining ingredients.

Add dressing and toss.

Serve immediately.
