    endives

    cress rinsed and drained

  • 4

    tomatoes sliced

  • 10

    black olives

  • fresh parsley

  • 1

    onion very finely chopped

  • 2 Tbsp.
    (30 mL)

    wine or cider vinegar

  • 1 Tbsp.
    (15 mL)

    honey

  • 3 Tbsp.
    (45 mL)

    corn oil

  • 2 Tbsp.
    (30 mL)

    lemon juice

  • salt and pepper to taste

  • 1 pinch

    sugar

Preparation

Thinly slice the endives and put in a salad bowl.

Add cress, tomato and olives.

Top with dressing and garnish with fresh parsley.
