Fava Bean-Root Vegetable Casserole

Add all
  • 2 cups
    (500 mL)

    Shelled fresh fava beans

  • 1

    large onion, diced fine

  • 2

    carrots, peeled and diced fine

  • 2

    celery, diced fine

  • 2

    parsnips, peeled and diced fine

  • 1

    medium white turnip, peeled and diced fine

  • 1

    garlic clove, minced

  • 1/2 cup
    (125 mL)

    diced bacon

  • 4 cups
    (1 L)

    chicken broth

  • 1

    bay leaf

  • 1 Tbsp.
    (15 mL)

    extra virgin olive oil

  • Salt and pepper to taste


In a pot, heat olive oil on medium and add bacon, garlic, onion, carrots, celery, parsnips and turnip. Cook 3 minutes, stirring occasionally.

Add beans, bay leaf and chicken broth.

Cover and simmer 40 minutes on medium-low.

Remove bay leaf and season to taste with salt and pepper.
