French Style Roast with Baby Squash

Ingredients

Add all
  • 2 Tbsp.
    (30 mL)

    extra virgin olive oil

  • 2 3/4 lb
    (1 1/4 kg)

    french style roast

  • salt and pepper to taste

  • 12

    whole red pearl onions

  • 12

    whole carrots

  • 12

    baby zucchini

  • 12

    baby patty pan squash

Preparation

Preheat oven to 350°F (180°C).

Heat oil in a skillet over medium heat and brown roast on all sides.

Transfer meat to a roasting pan, and season.

Roast for approximatly 50 minutes, basting regularly with pan juices.

Halfway through cooking time, turn roast over and place vegetables around it.

Serve with vegetables.

Cooking time may vary depending on the thickness of the roast and desired degree of doneness.
