French Toast with Cream Cheese

    slices of french bread, about 1/2 inch (1.5 cm) thick, preferably stale

  • 4 oz
    (125 g)

    canadian cream cheese, softened

  • 1/2 cup
    (125 mL)

    raspberry jam

  • 4


  • 1/2 cup
    (125 mL)


  • 1/2 tsp.
    (2 mL)

    vanilla extract

  • 1 Tbsp.
    (15 mL)

    vegetable oil

  • icing sugar


Spread Cream Cheese evenly on 4 slices of bread. Spread jam over cheese. Top with remaining slices of bread.

Whisk together eggs, milk and vanilla and pour mixture into a shallow dish just large enough to hold the 4 sandwiches. Place sandwiches in dish, turning over to cover evenly.

Heat oil in non-stick frying pan and fry sandwiches over medium-low heat for 2 1/2 to 3 minutes per side or until golden brown. Sprinkle with icing sugar, cut and serve.
