  • 1 cup
    (250 mL)

    cold mashed potatoes

  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • 1/2 Tbsp.
    (125 mL)

    fresh lemon juice

  • 2

    garlic cloves, minced


In a food processor, combine mashed potatoes, olive oil, lemon juice and garlic and process until mixture is creamy smooth
